With Makar Sankranti just around the corner, the festive preparations are in full swing. Many households are already busy making traditional sesame-based treats like ladoos, chikkis, and sweets. One must-try delicacy is Sesame and Jaggery Paratha (Tilache Poli), a delicious and easy-to-make dish enjoyed during this celebration.

Ingredients:

  • ½ cup sesame seeds
  • 1 cup roasted peanuts
  • 1 cup jaggery
  • 1 cup all-purpose flour
  • 1 cup grated dried coconut
  • Nutmeg and cardamom powder

Method:

  1. Prepare the Filling:
    Combine sesame seeds, roasted peanuts, jaggery, grated coconut, nutmeg, and cardamom powder in a bowl. Blend this mixture in a grinder until finely mixed and uniform.
  2. Prepare the Dough:
    Knead the all-purpose flour into a soft, smooth dough. Cover it and let it rest for about 30 minutes to make it easier to roll.
  3. Assemble the Paratha:
    • Take a small portion of dough and flatten it slightly.
    • Place two tablespoons of the prepared filling in the center.
    • Fold the dough around the filling, seal it, and gently roll it into a paratha.
  4. Cook the Paratha:
    Heat a griddle and cook the paratha on both sides until golden and crispy. Optionally, brush it with ghee or oil for extra flavor.
