When it’s monsoon, there’s a magical urge to have some fried food. And what better than bread pakora?  It may not be the healthiest snack out there, but it sure is one of the tastiest. Crispy, warm, and filled with spicy potato stuffing, it pairs perfectly with a hot cup of evening chai. The best part? You can make it at home with simple ingredients. Here’s how.

Let’s Start with the Stuffing

First, take three boiled potatoes and mash them in a bowl. Now, add some chopped coriander leaves, a little coriander powder, dry mango powder (or lemon juice if you don’t have that), and a pinch of salt.

To add some extra flavour, make a quick tadka. Heat a little oil in a small pan. Add cumin seeds and red chilli flakes. Turn off the heat after a few seconds and pour this tadka into your mashed potatoes. Mix everything really well. Your stuffing is ready.

Time to Make the Batter

In another bowl, add one cup of gram flour (also called besan), a little turmeric, red chilli powder, baking soda, carom seeds (ajwain), and some salt. Mix it all dry first. Then slowly add water, little by little, and stir till you get a smooth, runny batter. Not too thick, not too watery.

Let’s Assemble the Pakora

Take two slices of bread. Spread some ketchup or chutney on one slice. Add a thin layer of your potato stuffing. Cover it with the second bread slice and press gently. Now cut it diagonally to make triangle shapes.

Dip each triangle into the batter. Make sure it’s fully coated. Carefully put it in hot oil and fry until both sides are golden brown and crispy. Take them out and place them on tissue paper to remove extra oil.

Take a few green chillies and cut them in half. Fry them in the same oil for just 10-12 seconds. Sprinkle some salt on top and give them a mix.

Serve your crispy bread pakoras with green chutney or tomato ketchup and a cup of hot chai.
